Sweet and Sour Vegetables – USDA
Makes: 6 servings
Lemon juice, honey, soy sauce and pineapple juice form the basis of this delicious sweet and sour sauce. Enjoy!
Ingredients
- 1 tablespoon of honey
- 1 tablespoon lemon juice
- 1 teaspoon soy sauce (low sodium)
- 1/4 teaspoon of ginger
- 1 cup pineapple (canned)
- 1 tablespoon cornstarch (for thickness)
- 2 teaspoons of oil
- 1 package frozen sautéed vegetables (16 oz bag)
directions
- Combine all ingredients except vegetables in a bowl, mix and set aside.
- Heat 2 teaspoons of oil in a frying pan and add the frozen vegetables. Cook for 3 to 4 minutes or until the vegetables are tender but still crisp.
- Add the sweet and sour sauce and cook for another 2 minutes or until the mixture comes to a boil. Add water if it seems too thick.
- Serve immediately. This dish is excellent over pasta or brown rice.
