Orange Glazed Skinless Chicken Wings – USDA

Makes: 5 servings

Orange marmalade flavors these delicious skinless chicken wings. Enjoy this appetizer with brown rice and grilled or roasted vegetables.

  • 10 chicken wings (skin removed)
  • 3 tablespoons of butter
  • 1 teaspoon of seasoned salt
  • 8 tablespoons of orange marmalade (1/2 cup)

  • Rinse the chicken wings and dry on paper towels. Tuck the tip of the wing under the larger joint to form a triangle.
  • Heat the butter in a skillet (200 degF on a temperature-controlled gas burner).
  • Sprinkle the wings with seasoned salt and place them in heated butter. Saute on a temperature-controlled gas burner (325 degrees F) until evenly browned on both sides, about 20 minutes.
  • Spread with orange marmalade, continuing to sauté, basting frequently for another 20 minutes.
  • Remove from the pan. Serve hot.
  • Maintain at service temperature on the automatic burner or in the “Keep-Warm” oven set at 170 deg F. They will be nicely frozen and “sticky”.

Pieces of thigh or whole chicken can be prepared this way and served as a starter.
