Baked Potato Pancakes – USDA

Makes: 12 servings

These potato patties are easy to bake in the oven and offer a healthier take on a traditional Hanukkah recipe.


  • 2 tablespoons of olive oil
  • 3 tablespoons whole wheat flour (or all-purpose flour)
  • 1 teaspoon of baking powder
  • 3/4 teaspoon of salt
  • 2 Russet potatoes, large (or 1 pound Yukon Gold potatoes)
  • 1 onion, small peeled
  • 1 egg, large
  • applesauce and yogurt (plain low fat or Greek)


  1. Turn the oven on to bake and set it to 425 degF. Lightly oil the baking sheet (s) by spreading the oil around with your clean hand or a paper towel.
  2. Put the flour, baking powder and salt in a small bowl and mix well.
  3. Use the large holes in your grater to grate the potato, then grate the onion as well.
  4. Place the potato and onion mixture in the colander inside the sink. Using a paper towel, press down on the potato mixture to wring it out and soak up some of the extra moisture. Stir and sponge again.
  5. Put the potato mixture in the large bowl, add the egg and stir well. Add the flour mixture and mix well.
  6. Using a spoon or your fingers, take a lump of the potato mixture into the bowl and spread it in a round, flat nest on the oiled baking sheet: this should form a circle of about 3 inches wide and 1/4 inch thick. Repeat the operation to fill in the sheet. (You don’t need to leave any space between them.)
  7. Turn until the bottoms are golden brown, 15 to 20 minutes, then flip the pancakes for another 10 minutes. Serve the latkes with applesauce and yogurt (optional).


These Hanukkah favorites are traditionally fried in oil to celebrate the eight nights of light oil (much like a menorah, which is a special Hanukkah candle holder). Our potato pancakes are actually baked, which makes them easier, crispier and healthier.
